Memphis Style Bbq Ribs Recipe
Ingredients:
Apple juice in basting
3 lbs of baby back ribs
1 c of vinegar (red wine)
2 tsps of salt
1/4 c of mustard
2 tsps of pepper; crushed coarsely
2 c of onion; diced
2 cloves of garlic; finely chopped
1/3 tsp of hot sauce (Louisiana)
1/2 c of packed sugar (brown)
2 pcs of lemons; cut thinly
2 c of khup
Instructions:
Remove excess fat from the ribs. Insert tip of the knife under the membrane covering the bone. Loosen the membrane for the finger to have a solid grip with the use of a paper towel. Peel the membrane apart from the rack. Using a knife, remove fat off the bone. Season ribs in a thin layer with salt and black pepper on each side.
On the grill, place rack in which the rib side is facing down for one and a half hours. Turn ribs over every 15 to 20 minutes. Using apple juice, baste rack on each turn for an hour and 15 minutes by spraying or brushing the apple juice. If not using direct heat and only by smoke, turn every one hour grilling for 4 to 6 hours.
Blend onion, vinegar, garlic, sugar, hot sauce and mustard in a food processor ’til smooth. Pour mixture into a saucepan. Mix in the 2 c of khup. Let it simmer for 20 minutes and drop in the sliced lemons.
Occasionally stir to avoid sticking. Baste ribs with the sauce frequently for the remaining grilling time. Be sure to avoid burning the ribs as sugar burns easily. Serve with the sauce. Yields 1 serving.
