Chopped Barbecue Recipe

Ingredients:

3 lbs of pork roast (bone in)
2 Tbsps of crushed pepper flakes (red)
2 tsp of salt
3/4 c of vinegar (white)
1 tsp of pepper (black, freshly ground)
2 pcs of onion (medium); chopped finely
1 pc of bell pepper (green); cored, seeded then chopped
2 c of BBQ sauce

Instructions:

Rinse pork roast then pat dry using a paper towel. Combine (black and red) peppers and salt; rub on pork. Loosely cover with parchment paper; place inside the refrigerator for overnight. Let it stand at room temperature for an hour on (roasting) pan.

Preheat oven at 300 degrees F. Pour vinegar onto marinated pork then scatter bell pepper and onions. Roast till meat reaches 180 degrees F. Let it stand for an hour and save the juice from pan. Discard bone; chop meat.

Heat (barbecue) sauce inside a saucepan above gentle heat. Skim fat in the juice then add to heated sauce, add onions, bell pepper, and pork; stir till thoroughly heated. Serve while hot.
