Chayote-Black-Eyed Pea Relish Recipe
Ingredients:
1 pc of chayote (small)
1 c of cooked peas (black eyed)
1 pc of garlic clove (small); chopped finely
1 pc of chile (Serrano); deribbed, seeded then minced
2 tsps of chopped cilantro (fresh)
4 Tbsps of mango (or papaya); diced
2 pcs of scallions (only white part); sliced thinly
1/4 c of corn kernels (fresh); roasted
2 tsps of lime juice (freshly squeezed)
2 tsps of wine (white, fine quality)
2 Tbsps of vinaigrette
Salt (to taste)
Instructions:
Peel chayote and cut to half. Remove seed and dice to 1/4 inch; place on large bowl. Add peas, garlic, chile, cilantro, mango, scallions, kernels, juice, wine, and vinaigrette; mix them well. Add salt if desired; let it stand about an hour prior to serving.
