Cha Shu (Barbecued Pork Strips) Recipe

Ingredients:

2 lbs of pork butt (boneless)

For the Marinade:
2 Tbsps of stock (chicken)
2 Tbsps of soy sauce (dark)
1 Tbsp of condiment (soybean)
1 Mein See*
1 pc of crushed garlic clove (large)
1 Tbsp of rice wine (Chinese, or dry sherry)
1-1/2 Tbsps of honey (pure)
2 Tbsps of Hoisin sauce
3/4 tsp of salt
Food color (red)

Instructions:

Cut pork butt into (long) strips. Mix stock, (soy) sauce, (soybean) condiment, main see, garlic, rice wine, honey, salt, Hoisin sauce, and coloring in a bowl. Marinate meat at about three hours at room temperature or six hours inside refrigerator. Flip (meat) strips frequently.

Preheat oven at 350 degrees F and place pan, half-filled with warm water. Place meat directly onto racks; roast at about forty-five mins w/o disturbing. Increase heat to 450 degrees F and continue to roast about fifteen mins more. Slice meat; serve while warm.

*Can be bought inside Oriental markets. Once opened, refrigerate.
