Bruschetta Burgers Recipe

Ingredients:

1 Tbsp & 1 tsp of olive oil
1 tsp of garlic; minced
4 pcs of burger rolls (crusty)
1 pc of trimmed scallion bunch
1/8 tsp of salt
2 tsps of thyme leaves (fresh); chopped or 1/2 tsp for dried thyme leaves
1/2 tsp of peppercorns (freshly cracked, black)
450 g of lean beef (ground)
8 pcs of tomato slices (ripe, large)
1/2 c of cheese (goat or Feta); crumbled

Instructions:

Mix garlic and oil inside a small bowl. Slice the burger rolls and brush oil on the (cut) sides. Grill the rolls with the (cut) side facing down till toasted. Place the rolls on a platter then grill the scallions for a couple of minutes on each side till slightly charred then cut them into half (crosswise).

Combine thyme, peppercorns, and salt inside a small bowl then shape the beef to four patties. Drizzle the thyme mix on each sides then grill for three mins on each side till medium-done.

While waiting, place two tomato slices and scallion on each of the rolls then top it with burger patty, cheese, then the rest of scallion, cover it with the top roll.
