Papa’s Barbecue Goat (Or Barbado) Texas-Style Recipe

Ingredients:

20 lbs of barbado or goat
1 c of salt
2 c of sugar or to taste
1 pc of jalapeno (dry); ground
1 Tbsp of pepper (black)
Approximately 1 tsp of cumin
1 pkg of bbq sauce
1 c of mustard (prepared)
1/2 c of vinegar (apple cider)
1 tsp of salt
1 tsp of black pepper

Instructions:

Combine jalapeno, salt, cumin and pepper. Sprinkle on meat in a generous amount. Slowly grill for a couple of hours; it depends on the thickness of the barbado. Make sure that the barbado is well over fire about 20-24 inches.

Brush the barbado with oil often to avoid meat from drying. Prepare the sauce while the barbado is cooking. Brush barbado with the prepared sauce half an hour before turning the heat off. Continue to grill while turning often the barbado, brushing sauce on each turn. This will make 24 or more servings.
