Barbequed Beef Short Ribs Recipe
Ingredients:
6 lbs of beef (chuck ribs); cut to a rib pie
1 c of water
2/3 c of sherry (dry)
3/4 c of soy sauce
1/2 c of brown sugar (dark); packed
6 cl of garlic; finely chopped
1 Tbsp of red pepper; ground
1 Tbsp of ginger (fresh); grated
2 tsps of five-spice powder (Chinese)
Instructions:
Remove fat off the meat. Arrange meat in a large-sized baking pan. In a medium-sized saucepan, mix all other ingredients. Over medium-heat, cook ’til sugar dissolves. Turn off stove and set aside to slightly cool. Coat ribs with marinade and transfer inside refrigerator to marinate for an hour or more; turning the meat once.
Use foil to cover the pan. Put medium-hot coals around the drip-pan. Place the pan over and roast ribs for 45 minutes. Transfer ribs to the grid and save the marinade. Let it continue roasting while covered for an hour or more ’til tender. Turn ribs often. Baste ribs with the marinade for the last few minutes. Good for 1 helping.
