Pesto-Stuffed Steaks Recipe
Ingredients:
2 pcs of steaks (rib eye, 1.5 thick, approx 2 lbs)
1/4 c of pesto
2 Tbsps of vegetable or olive oil
2 Tbsps of cheese (Parmesan); finely grated
1/3 c of cheese (Parmesan); finely grated
Instructions:
Heat the coals.
Cut horizontally on each side of the steak to form pockets. Make sure not to cut all the way through.
Combine a couple tablespoons of Parmesan cheese and pesto. Stuff the beef pockets with this mixture evenly. Press the steak to close the pockets. Drizzle some oil on the steaks. Roll steaks over Parmesan cheese ’til coated evenly.
Cover while cooking 4-5 inches away from the heat for 12-14 minutes in medium rare steaks. Turn the steaks once halfway through cooking time.
Cut steaks thickly into strips in serving. This is good for 4 persons.
