Calypso Grilled Pineapple Recipe
Ingredients:
1/2 c honey
Pineapple, sliced into eight wedges
1/2 c light-brown sugar (packed)
1/2 c of Worcestershire Sauce
1/2 c rum (preferably dark)
Ice cream (vanilla)
1/2 c margarine
Instructions:
Combine rum, Worcestershire, sugar, butter and honey in saucepan. Boil it over medium heat. Stir it often. Adjust to medium-heat. Allow to simmer for twelve mins’til sauce slightly thickens, occasionally stirring. Take away from the heat and cool.
Coat fruit wedges w/ some sauce. Arrange pineapples on grid brushed w/ oil. Grill pineapples over high coals for five mins. or ’til glazed. Turn and baste w/ sauce often. Serve w/ sauce and ice cream.
