Best Of The Border Barbecue Brisket-Austin Am Recipe

Ingredients:

10 lbs of brisket (fresh)
5 Tbsps of rub (best of the border, dry)
1/4 c of beer (full-flavor)
BBQ sauce (of your choice)

Instructions:

Preheat the BBQ pit, 250 deg Fahrenheit. Cut the fats on the ends of the brisket; pat it dry onto the meat evenly. Place the brisket on the pit with the side of the fat facing up. Cook for four hours then take the meat out from the pit and place on a heavy duty foil. Add the beer and seal the foil.

Return the foiled brisket inside the pit. Increase the temperature by 300 deg Fahrenheit. Allow the pit to cook again down, 220-250 degrees F and continue to cook for three more hours. Take out the brisket and top it with a BBQ sauce of your preference. Slice then serve.
