Beef and Vegetable Kabobs Recipe
Ingredients:
1 Tbsp salad oil
1 medium-sized squash (straight-neck)
1/2 pound of medium-sized mushrooms
1 medium-sized Spanish onions; separated and quartered
1 Tbsp dry sherry
1/2 pound cherry tomatoes
1 Tbsp of chili sauce
3 Tbsps of soysauce
1 medium-sized zucchini
1/4 tsp powdered ginger
1 medium-sized red pepper
3/4 c Italian
1 pound rounded steak; sliced to 1.5-inch chunks
Instructions:
Combine steak, onions, soy sauce, dry sherry, oil, chili sound and ground ginger in a bowl. Place in covered container then refrigerate mixture for a minimum of two hours. Stir occasionally. Cut squash and zucchini to inch-sized pieces,, then thread alternately mushrooms, squash, zucchini, tomatoes & peppers in skewers.
Separately, thread onions and beef on skewers. Reserve remaining marinade. Put both meat & veggie skewers over mid-heat. Cook for ten minutes. Brush w/ Italian and marinade. Remove from heat once tomatoes starts to crack.
