Barbequed Chuck Roast Recipe
Ingredients:
4 lbs of round chuck roast; cut into 2 inches thick
2 tsps of meat tenderizer
1/2 tsp of rosemary
3 pcs of spring onion; diced
1 cl of garlic
1/4 pc of green pepper; chopped
2 stalks of celery; chopped
1/2 tsp of oregano
1 Tbsp of Worcestershire sauce
A dash of cayenne
3 Tbsps of peanut oil
3/4 c of burgundy wine
Instructions:
Trim fat off meat. Coat evenly the meat with tenderizer. Use fork to pierce the chuck roast deeply. Transfer to a dish. Add spring onions, pepper, garlic, oregano, celery, cayenne and rosemary.
Mix the oil, Worcestershire and burgundy sauce. Pour it over the meat and refrigerate the whole night. Turn meat often spooning some marinade over the top of meat.
Sear every side of the meat over some glowing briquettes with meat 6 inches away from the heat. Baste frequently while cooking using the marinade. Yields 1 serving.
