Barbecued Spareribs Recipe 3
Ingredients:
3.5 lbs of pork (ribs)
12 tsp of black pepper (freshly ground)
2 tsps of salt
2 Tbsps of shallots; minced
2 Tbsps of scallions; minced
1.5 Tbsps of peanut oil
1 Tbsp of garlic; minced
1 Tbsp of ginger (fresh); minced
2 Tbsps of cilantro (fresh); minced
3 Tbsps of chiles (fresh); minced
2 Tbsps of sherry (dry) or rice wine
3 Tbsps of hoisin sauce
1 Tbsp of zest (orange)
2 tsps of sesame oil (Chinese)
2 Tbsps of chili bean (Chinese sauce) or
1 tsp of vinegar (Chinese white-rice or cider)
1.5 Tbsps soy sauce (light)
1/2 c of orange juice
2 tsps of tomato paste
2 tsps of satay paste
1.5 Tbsps of soy sauce (dark)
1 tsp of pepper (freshly ground)
1 tsp of salt
2 Tbsps of sugar
Instructions:
Heat oven up to 250 degrees F. Season pork with pepper and salt evenly. Place pork over a roasting rack. Bake for a couple of hours in order to remove fat off and to tenderize pork. Allow spareribs to drain from its fat. Set it aside.
On a large-sized pan or wok, add oil, shallots, ginger, scallions and the garlic. Fry for half a minute and mix in the other ingredients. Lower the flame to allow mixture to simmer for about 15 minutes. Set it aside to cool.
Before grilling ribs, coat using the mixture. When briquettes are hot and white as ash, grill ribs and baste using the saved sauce for 5 to 10 minutes per side. Serve while hot. This is good for 4 persons.
