Barbecue Pork Ribs with Currant Glaze Recipe
Ingredients:
1 tsp of powdered ginger
1/2 tsp of paprika
1 tsp of salt
3 Tbsps of orange-flavored juice
1 & 1/2 Tbsps of mustard (Dijon-style)
1 tsp of powdered coriander
1/4 tsp of black pepper
3 pounds spareribs
3 Tbsps of lemon-flavored juice
Fresh sliced of orange for garnishing
Instructions:
Mix together powdered ginger, coriander, paprika, salt and black pepper, rub to meat portions of the ribs. Place in covered container then refrigerate it for two hours. Thaw for twenty minutes prior to broiling. Grill ribs, placed ten to twelve inches away coals, to desired doneness while turning meat from one side to the other.
In separate bowl, combine lemon and orange juice, mustard and currant jelly. Brush frequently your ribs w/ glaze at the last fifteen minutes prior to removing meat from fire. Top w/ sliced orange for garnishing.
